A: Core standards include the following areas: identification, prevention of cross contamination (in cleaning, preparation, and handling), training, and quality management. GFFS reviews and compares the food service’s policies, procedures, and practices to GFFS’s Core Standards of Practices for Gluten-Free Food Production and Service. GFFS also reviews areas where food handling extends beyond food preparation to provide a safe continuum of care and service for the consumer.
